Spinach & Quinoa

Ingredients:
1 Tbsp olive oil
1 large uncooked onion(s), minced  ( Mincing a whole onion without a food processor takes a lot of time & tears) Use a Food Processor!
1 clove garlic minced (again use a food processor)
1 cup(s) uncooked quinoa, rinsed (or purchase pre-rinsed quinoa)* This requires a wire meshed strainer, which I don't have, resulted in quite a mess
2 cup(s) reduced-sodium chicken broth
1/8 tsp black pepper
1/8 tsp crushed red pepper flakes, optional
4 cup(s) fresh spinach, baby leaves, packed, coarsely chopped

I don't cook, that's why I'm fat

I know the basics of cooking, but I choose not to do it very often. I've decided I am tired of eating the same things every day! Starting now my goal is to find a new recipe atleast once a week. Here goes nothing...
